For those who don’t know, am about to show you how to fry your traditional Ghanaian ‘koose’ with Raw Shea Butter.
Koose, can be best explained as deep fried black-eyed peas (beans) flour donut. It emanated from Northern Ghana. This is usually for breakfast meal. It is a real delicacy. Koose also known as ‘akara’ is eaten with Hausa koko. Hausa koko is making porridge out of organic millet flour.
Here we go! Lets make Koose:
- 3 handful Organic black-eyed peas (beans) , i call black-eyed peas beans
- half onion
- spring water or healthy bone broth
Take the beans and soak them in pan and add spring water just enough to cover the beans. Basically, soak the beans in water overnight. In the morning, take the beans out of the pan with your hands and put them in the blender. Just put in a tablespoon of the water you soaked the beans in, in the blender with the beans. Add your habanero and onion to taste. Blend it until smooth. Make it into a smooth paste. Scrape it into a clean bowl. Add salt to taste. Mix in air into the beans for about 10 minutes. Mix until it is a firm fluffy texture. Add less soaking water as needed.
Heat your Raw Shea Butter up to fry. Drop the koose into the hot raw shea oil with tablespoon and fry it. Fry one side until oil is done foaming and then flip to the other
side, then stir it. It comes out nice brown as you can see in the picture.
